Pressure Cooker Recipes Ingredients

  • 2 teaspoons olive oil
  • 4 Italian turkey sausage links, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup pearl barley
  • 1 cup green lentils
  • 1 bone-in chicken breast half, skin removed
  • 1/2 cup chopped fresh parsley
  • 3 cups chicken stock
  • 1 (15 ounce) can chickpeas (garbanzo beans), drained
  • 1 (16 ounce) bag fresh spinach leaves, chopped
  • 1 cup mild salsa

  1. heat 1 teaspoon olive oil in a pressure cooker over medium heat. Add sausage meat, and cook until browned, breaking it into crumbles. Remove sausage to a plate and drain oil. Add another 1 teaspoon of olive oil to pressure cooker; cook onion and garlic until onion is transparent. Add barley and stir 1 minute. Return sausage to pressure cooker. Add lentils, chicken, parsley, and chicken stock to cooker, adding enough stock to completely cover chicken. Close cover securely; place pressure regulator on vent pipe. Bring pressure cooker to full pressure over high heat (this may take 15 minutes). Reduce heat to medium high; cook for 9 minutes. Pressure regulator should maintain a slow steady rocking motion; adjust heat if necessary.
  2. Remove pressure cooker from heat; use quick-release following manufacturer's instructions or allow pressure to drop on its own. Open cooker and remove chicken; shred meat and return to soup. Add garbanzo beans, spinach and salsa; stir to blend and heat through before serving.

    * 1 tablespoon olive oil
    * 1 (3 pound) whole chicken, cut into pieces
    * salt and pepper to taste
    * 1/2 teaspoon paprika
    * 1/2 teaspoon dried marjoram
    * 1/4 cup white wine
    * 1/4 cup chicken broth
    * DUCK SAUCE:
    * 1/4 cup apricot preserves
    * 2 tablespoons white vinegar
    * 1 1/2 teaspoons minced fresh ginger root
    * 2 tablespoons honey

Pressure Cooker Recipe Instructions

   1. Heat the olive oil in the pressure cooker with the lid off, over medium-high heat. Add chicken and brown on all sides as evenly as possible. Remove chicken from the cooker, and season with salt, pepper, paprika and marjoram. Drain and discard fat from the cooker, and mix in wine and chicken broth, scraping any bits of food that are stuck to the bottom.
   2. Return chicken to the cooker over medium-high heat, secure the lid, and bring to high pressure for 8 minutes, or until the chicken is tender. Reduce pressure before opening the lid. The internal temperature of the chicken meat should be at 180 degrees F (82 degrees C).
   3. Remove chicken to a serving dish, and add the apricot preserves, vinegar, ginger and honey to the pot. Bring to a boil, and cook uncovered until the sauce has reduced into a thick and syrupy consistency, about 10 minutes. Spoon over chicken and serve.

    * 6 medium red potatoes, scrubbed
    * 1 cup water
    * 1/4 cup chopped onion
    * 1 stalk celery, chopped

    * 1/2 cup mayonnaise
    * 1 teaspoon yellow mustard
    * 1 teaspoon cider vinegar

   1. Place potatoes in pressure cooker with water. Cook on high pressure 3 minutes. If potatoes are larger, cook for 4 minutes. Let steam release for 3 minutes. Then quickly release pressure and open cooker. Peel and dice potatoes when they are cool enough to handle.
   2. Alternate layers of potatoes, onion, and celery in a large bowl. Season each layer with salt and pepper. Top with the chopped egg and sprinkle with dill.
   3. Mix together the mayonnaise, mustard, and cider vinegar in a small bowl. Gently fold the mayonnaise mixture into the potatoes. Chill at least one hour before serving.
